Recipe information-Black Forest Gateau
Cooking time
1 hour 30 minutes
Ingredients
- 200g dark chocolate
- 200g unsalted butter
- 200g caster sugar
- 4 large eggs
- 140g self-raising flour
- 50g cocoa powder
- 400ml double cream
- 2 tbsp icing sugar
- 1 tsp vanilla extract
- 400g pitted cherries (fresh or tinned)
Instructions
- To start, preheat your oven to 180°C and grease and line two 20cm cake tins. Melt the dark chocolate and butter together in a heatproof bowl over a pan of simmering water, then set aside to cool slightly. In a separate bowl, whisk together the sugar and eggs until pale and fluffy, then fold in the chocolate mixture, followed by the flour and cocoa powder.
- Divide the batter between the cake tins and bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Allow the cakes to cool completely before removing from the tins.
- Whip the double cream with the icing sugar and vanilla extract until soft peaks form. If using tinned cherries, drain them well, reserving the juice. If using fresh cherries, pit them and toss in a little sugar to sweeten.
- To assemble the gateau, place one of the chocolate sponges on a serving plate and spread with a layer of whipped cream. Top with half of the cherries, then place the second sponge on top. Cover the entire cake with the remaining cream and decorate with the remaining cherries.
- For the final touch, drizzle the reserved cherry juice over the top of the gateau for a glossy finish. Chill in the fridge for at least an hour before serving to allow the flavours to mingle.
