Cooking time

30 minutes

Ingredients

- 250g digestive biscuits

- 100g unsalted butter, melted

- 397g tin of condensed milk

- 2 large bananas

- 300ml double cream

- 1 tsp vanilla extract

- 1 tbsp icing sugar

- Chocolate shavings, to decorate

Instructions

  1. To start, preheat your oven to 200°C/180°C fan/gas mark 6. Place the chopped rhubarb in a bowl and sprinkle with the 100g of caster sugar and vanilla extract. Toss to combine and leave to macerate for 10 minutes while you prepare the rest of the dish.

    2. Roll out the puff pastry and cut out a circle slightly larger than your tart tin. Place the pastry circle on top of the rhubarb mixture in the tin and tuck in the edges. Bake in the preheated oven for 20-25 minutes, until the pastry is golden and crisp.

    3. While the tart is baking, make the custard by heating the double cream in a saucepan until just below boiling. In a separate bowl, whisk together the egg yolks and 50g of caster sugar until pale and fluffy. Slowly pour the hot cream over the egg mixture, whisking constantly.

    4. Once the tart is cooked, remove it from the oven and carefully invert it onto a plate. Serve slices of the tart with a generous dollop of the custard on top. Enjoy the delicious contrast of sweet custard and tangy rhubarb in every bite!
