- 2 tbsp flour

- 1 cup chicken stock

- 1/2 cup milk

- 1/4 cup cream

- Salt and pepper, to taste

- 2 cups self-raising flour

- 1 cup shredded suet

- Water, as needed

Next, stir in the flour to create a roux. Slowly pour in the chicken stock, milk, and cream, stirring constantly until the mixture thickens. Season with salt and pepper to taste.


Add in the shredded chicken and diced ham, stirring to combine. Let the filling simmer for a few minutes until heated through. Remove from heat and set aside.


In a separate bowl, mix together the self-raising flour and suet. Slowly add in water a little at a time until a soft dough forms.


Roll out the suet pastry on a lightly floured surface to fit your pie dish. Spoon the chicken, ham, and leek filling into the dish and top with the pastry, crimping the edges to seal.


Bake the pie in the preheated oven for about 40-45 minutes, or until the pastry is golden brown and cooked through.
