- 500g lamb shoulder, diced

- 1 onion, chopped

- 2 cloves garlic, minced

- 1 tsp ground cumin

- 1 tsp ground cinnamon

- 1 tsp ground ginger

- 1 tsp paprika

- 1 can chopped tomatoes

- 1 cup chicken stock

- 1 cup dried apricots

- Handful of fresh coriander, chopped

- Salt and pepper to taste

- Olive oil


Instructions


To start, heat some olive oil in a large pot over medium heat. Add the diced lamb shoulder and brown on all sides. Once browned, remove the lamb from the pot and set aside.


In the same pot, add the chopped onion and garlic. Cook until fragrant, then add the ground cumin, cinnamon, ginger, and paprika. Stir well to coat the onions and garlic in the spices.


Next, return the lamb to the pot and add the chopped tomatoes and chicken stock. Bring to a simmer, then cover and let cook for 1.5 hours, stirring occasionally.


After 1.5 hours, add the dried apricots to the pot and let simmer for another 30 minutes, or until the lamb is tender and the apricots are plump.


Once the lamb is cooked through and the sauce has thickened, season with salt and pepper to taste. Sprinkle with fresh coriander before serving.
