Ingredients

- 4 haddock fillets

- 1 cup oats

- 1 lemon, zest and juice

- 2 tbsp olive oil

- Salt and pepper

- For the tartare mayonnaise:

- 1/2 cup mayonnaise

- 1 tbsp capers, chopped

- 1 tbsp gherkins, chopped

- 1 tbsp parsley, chopped

- Salt and pepper


Instructions


To start, preheat your oven to 200°C (180°C fan). In a bowl, mix together the oats, lemon zest, olive oil, salt, and pepper. Place the haddock fillets on a baking sheet lined with parchment paper and press the oat mixture onto the fillets.


Pop the fish in the oven and bake for about 15-20 minutes, until the oats are golden and the fish is cooked through. While the fish is cooking, mix together the mayonnaise, capers, gherkins, parsley, lemon juice, salt, and pepper to make the tartare mayonnaise.
