- 200g self-raising flour

- 1 tsp baking powder

- 1 tsp ground cinnamon

- 1/2 tsp ground nutmeg

- 200g grated parsnips

- 100g chopped walnuts

- 175g soft light brown sugar

- 175ml sunflower oil

- 3 large eggs


Instructions


To start, preheat your oven to 180°C (160°C fan) and grease and line a 20cm round cake tin. In a large bowl, sift together the flour, baking powder, cinnamon, and nutmeg. Add the grated parsnips and chopped walnuts, and stir to combine.


In a separate bowl, whisk together the sugar, oil, eggs, and maple syrup until well combined. Gradually fold the wet ingredients into the dry ingredients until you have a smooth batter. Pour the batter into the prepared cake tin and smooth the top with a spatula.


Bake in the preheated oven for 45 minutes, or until a skewer inserted into the center comes out clean. Remove from the oven and allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
