Ingredients
- 250g digestive biscuits
- 100g unsalted butter, melted
- 500g cream cheese
- 100g icing sugar
- 300ml double cream
- 1 tsp vanilla extract
- 300g mixed summer berries (such as strawberries, raspberries, blueberries)
- 50g caster sugar
- 2 gelatine leaves
Instructions
To start, crush the digestive biscuits in a food processor or by placing them in a resealable bag and bashing them with a rolling pin. Mix in the melted butter until well combined, then press the mixture into the base of a 9-inch springform cake tin. Pop it in the fridge to set while you make the filling.
In a large bowl, beat the cream cheese and icing sugar together until smooth. In a separate bowl, whip the double cream until soft peaks form, then fold it into the cream cheese mixture along with the vanilla extract. Spoon the filling over the biscuit base and smooth the top with a spatula. Chill in the fridge for at least two hours to set.
While the cheesecake is chilling, make the berry topping. Place the mixed summer berries and caster sugar in a saucepan over a medium heat. Cook, stirring occasionally, until the berries start to break down and release their juices. Remove from the heat and set aside.
